鱼香豆干

材料
豆干·300 克
银鱼·120 克
红辣椒·2 个
香葱·1 棵
生姜·1 小块
大蒜·5 瓣

调料
食用油·30 克
酱油· 1/2大匙
料酒·1 大匙
豆豉·1 大匙
精盐·1 小匙
白糖· 1/2小匙
味精· 1/2小匙

做法
1.豆干洗净,横剖成2 片再切成丝,放入热油锅中煎黄,盛出;
2.银鱼洗净,沥干水分,放入碗中,加入料酒去除腥味备用;
3.生姜、大蒜、香葱洗净,红辣椒洗净、去蒂及籽,均切末备用;
4.锅中倒油烧热,放入银鱼炒香,加入豆豉、酱油、白糖、精盐、味精及其余所有材料炒熟即可。

★厨师一点通
如果觉得银鱼有鱼腥味,往锅内滴几滴醋即可去腥。
