鲜香紫茄

材料
紫皮茄子·300 克
大蒜·4 瓣

调料
香油·2 小匙
甜面酱·1 小匙
精盐·1 小匙
味精· 0.5小匙

做法
1.将茄子洗净,带皮切成块状,放入沸水中氽一下,捞出沥干水;
2.把大蒜洗净捣成茸,放入茄子中,另放入精盐、甜面酱、味精、香油拌匀即可食用。

★厨师一点通
茄子焯水时可在水里加入少量盐、糖,这样既可保持茄子的本色,又可以使茄子更入味。
