东坡绣球

材料:猪绞肉300克,红萝卜1/3条,鸡蛋3个,豆苗50克。

调味料:
A料:淀粉1大匙
B料:酱油1.5小匙,糖、胡椒粉各1/4小匙
C料:高汤2杯
D料:淀粉水1大匙。

做法:
1)豆苗洗净,放入滚水川烫,捞出备用,红萝卜洗净,鸡蛋打入碗中,搅匀成蛋汁,淋入热油锅中煎成蛋皮,捞出,切成丝,放入盘中拌入A料拌匀备用。
2)猪绞肉剁成细末,放入碗中加入B料腌拌一下,捞出,沥干,沾上蛋丝、红萝卜丝,盛入盘中,移入蒸锅中蒸熟,取出。腌肉汁留下备用。
3)锅中倒入C料及腌肉汁煮滚,加入D料勾芡,淋在蒸熟得绞肉上即可。
