彩椒鸡片

材料:
青椒、红甜椒、黄甜椒各1/3个,鸡胸肉150克,鸡蛋1个。

调味料:
A料:盐1/2小匙,淀粉2大匙,色拉油1小匙。
B料:蠔油1.5小匙,米酒1小匙,糖1/4小匙,白醋1/8小匙。
C料:淀粉水1大匙。

做法:
1)青椒、红甜椒、黄甜椒分别去蒂和籽、洗净、切片(图1),鸡蛋打入碗中,滤除蛋黄,留下蛋白备用。
2)鸡胸肉洗净,切片(图2),加入A料及蛋白抓均匀并腌5分钟。
3)锅中倒入2杯油烧热,分别放入鸡胸肉、青椒、黄甜椒、红甜椒片略烫,捞起,沥干备用。
4)锅中留下2大匙油继续烧热,放入鸡胸肉、青椒、红甜椒、黄甜椒片炒至全熟,加入B料炒匀,再加入C料勾芡,即可。
